○ Red Pepper

- As hot pepper contains vitamins A and C, it is exceptionally good for respiratory illnesses and it strengthens the immune system. Red pepper contains 20-30 times more vitamin C than apples and its hot taste stimulates your stomach to secret more gastric juices.  By doing so, it stimulates our appetite and enhances our blood circulation.

○ Red Pepper and Kimchi

- Red pepper is the major ingredient of Kimchi and capsaicin determines the taste of Kimchi.  Haenam uses locally-grown red pepper and Nappa cabbage to make fresh, tasty Kimchi.

○ Capsaicin

- Red pepper is an important ingredient as it determines the taste of Kimchi.  Capsaicin is the substance that is responsible for the hot taste of red pepper.  It prevents oil from losing the taste and smell.  As crushed red pepper is the major seasoning in Kimchi, we can say that capsaicin determines the taste of Kimchi.
