JuCheon-myeon is the most typical clean area having unpolluted air, water and soil. Therefore, the most agricultural products of JuCheon are pollution free, clean and fresh. Especially, the soil of JuCheon has plentiful of minerals because that this area is a portion of the largest calcareous soil area of Korea.The dried red pepper of JuCheon has unique smell and spicy taste. Green pepper is also famous as red pepper does.
Effect of the Pepper
The dried red pepper especially under the sunlight, called "TaeYangCho" has a lot of capsaicin having strong antibiotic ability and maintaining human body to be warm.
The capsaicin, main ingredient of TaeYangCho, can dissolve the animal fats in human body so, it is helpful to prevent from obesity.
Traditionally, Koran has less number of overweight people, because the most Korean are vegetarians and common Korean foods, for example Gimchi, have has a lot of red peppers.
TaeYangCho is digested well and helpful for controlling absorbing the salt into body and protecting arteriosclerosis.
Method for distinction of the Peppers - Green pepper
The good quality of green pepper has moisture stem and fresh.
The good one has uniformed shape and green color.
If the shape is not uniformed then the cultivation method and environment are inferior states.
Fumbling with finger, harder pepper has hotter taste, soft pepper has milder taste.
- Dried red pepper
Under the daylight, the dried red pepper having dark red color not brown red color is better quality.
In the shadow, the dark opaque one is better than the light opaque one. The gloss of the surface is the better.
Shaking it, if it has clean ratting sound of the seeds, then it is well dried and the best quality.
The thicker flesh of red pepper with dark red color is the better of quality and taste. When it is grinded, it would be good red pepper powers.
Breaking the red pepper, one having red color at inner part is better than one having yellow inner part. The one having the less seed is the better.
Method for Keeping the Pepper
In Korea, generally, people merchandize red pepper power in a large quantity, at once. It is bad choice to keep the red pepper power into a dark, wet and warm warehouse. To keep the red pepper powder well, put the powder into several small clean plastic bags. Not into single plastic bag for one unit, use some plastic bags. Keep into cold storage of the refrigerator. Then the powder can be kept in fresh for a long time.
