Ssam means 'food that wrap rice and side dishes with fresh leafy green'.(leafy green - all vegetables which their leaves are edible) In the past, the range of the leafy greens was limited to lettuce, cabbage, crown daisy, pumpkin leaf and Petasites japonicus(Muwi) but due to today's increasing demand for mountain vegetables, all the vegetables that use large leaves are classified as the leafy greens. As a result, ssam is referred to as the food that wraps rice, side dishes or meat with the vegetable leafs and all the vegetables used here is called Ssamchaeso(Ssam vegetable). Ssamchaeso is full of vitamins, minerals, cellulose and crude drug substances and is therefore good for the health. * Range of Ssamchaeso - Leafy greens :cabbage, lettuce, kale, endive, pumpkin leaf, green perilla leaf etc. - Sanchae : Chwinamul(seasoned aster), wild parsley, Chamnamul(Pimpinella brachycarpa) etc. - Yangchae(Yang vegetables) : cabbage, head lettuce, celery, parsley etc. - Herb : Hoehyang(fennel), basil, sage, rosemary, mint etc.
